How to Eat a Lemon Cucumber

Lemon cucumbers are delicious at all sizes. The younger, smaller they are, the more tender the skin is. The longer they sit on the vine, the tougher the skin gets. I like to peel the skin as I think it's a little bitter. (The thinner skinned ones are not as bitter and you can keep the skin on for my nutrients)
I then like to slice them in wedges, like an apple, and enjoy plain or you can add salt & pepper, etc. Dip in fun dressing, or ranch, even! Chop into smaller pieces and add to salads. Add to ice beverages for a refreshing summer drink.
